I created this recipe one day while looking for a way to use some extra flaked coconut I had in my cupboard and I just love coconut macaroons!

Since giving birth to our 3rd child, I have started to eat a keto diet again. Luckily I lost most of the baby weight my first week home from the hospital, however I still have 10 more pounds I’d like to lose. I hope you enjoy this recipe as much as I do. I’ve truly not tasted a better coconut macaroon than this one!

Chocolate Chip Sea Salt Coconut Macaroons

Prep Time: 10 mins.
Bake Time: 15 mins.
Total Time: 25 mins.

Makes 13 Macaroons
Makes 13 Servings

2 cups unsweetened shredded coconut flakes
1 tbsp maple syrup
4 tbsp coconut oil
1 tsp vanilla extract
1⁄4 Cup Pyure stevia baking blend
2 egg whites whipped, stiff peaks
1⁄4 tsp sea salt
1⁄4 Cup Lily's dark chocolate chips


Directions:

1. Combine all ingredients except egg whites.

2. Whip egg whites until they form stiff peaks.

3. Fold mixture into whipped egg whites.

4. Roll into desired shape (about 1 tablespoon or bigger if desired)

5. Bake at 325 degrees for 15 minutes, till golden on top.

6. Store in an air tight container on the counter.
